Peanut Butter Cookies

If you like peanut butter, you will love these cookies. They also happen to be gluten-free and SO delicious!

I was experimenting the other day with ingredients that I always have at home and I came up with this recipe. These cookies taste as good, if not better than, any other peanut butter cookies and they’re low in sugar. I can’t say that they’re low in fat because they’re made with peanut butter, but there’s no other added fat.

For the sugar-free variation, just substitute one tablespoon of honey for the sugar.

Ingredients:

1 large egg

3 tbsp brown sugar

1 cup peanut butter

1/4 cup almond flour (Costco brand)

1 tbsp corn starch

1 pinch of sea salt

1/4 tsp baking powder

1 tsp vanilla

2 tbsp chocolate chips (optional)

2 tbsp chopped pecans, walnuts or cashews

Whisk the egg well. Add the sugar or honey. Whisk again until frothy. Add the other ingredients and stir until incorporated. Put the dough in the fridge for 20 minutes.

Use an ice-cream scooper to portion the cookies uniformly. Bake at 350 degrees for 11-12 minutes. Allow the cookies to cool for 15 minutes before transferring them to a plate.

I like to take a cookie to work with me every day to enjoy mid-morning with coffee or tea. It keeps me going until lunch and it feels like I’m having something naughty, but it’s not really that naughty.
