There’s been so much indulging these past few weeks that I’m actually craving salad today. This beauty is what I call a turkey Cobb salad. It’s loaded with fresh lettuce, grilled turkey and every vegetable and fruit I could find in the fridge. I topped it with some feta and pomegranate seeds and served it with a honey lime vinaigrette. Here’s the recipe for the vinaigrette.
Ingredients:
4 tbsp olive oil
4 tbsp fresh lime juice (2 limes)
2 tbsp honey
2 tsp Dijon mustard
1 tsp salt
1/2 tsp pepper
Just whisk and drizzle.
Serves 2. Enjoy!
