Moist vanilla cake made with oil.
Preheat the oven the oven to 325 degrees.
Grease and flour a 9 inch round cake pan.
In a stand mixer, fitted with the paddle attachment, or in a bowl, beat the eggs and sugar until light and fluffy.
Add the oil a little bit at a time and mix on low speed.
Add the yogurt and vanilla and mix until incorporated.
In a separate bowl mix the dry ingredients.
Add the dry ingredients to the wet ingredients and mix just until incorporated.
Pour the batter in the pan.
Add thin slices of fruit on top. Spread the fruit out about an inch apart.
Bake at 325 degrees in the centre of the oven for approximately 40 minutes or until a toothpick comes out clean.
